By Mary Myers | Published: September 18, 2015 | Last Updated: September 30, 2015 Healthy and Delicious Recipes for School Lunch The first recipe that I’m going to be making is kind of like a pita/enchilada little lunch. I don’t know what to call it. I have one stalk of celery nicely chopped up in here, about a cup and a half of chopped, diced-really-small mushrooms. I have one corn; two chopped, diced peppers. I’m making this for my whole family, a family of four. Black beans, probably going to use about half the can. I also have some Daiya cheese, the cheddar kind. You can use whatever kind of sauce you want, whether it be salsa, bruschetta sauce, tomato sauce, any kind of salsa you like with vegetables. … have some spinach here, so we’re just going to roughly chop that, and then also throw that into the whole mix. And whole wheat mini pitas, which are super cool because they’re tiny and it’s just bite-sized and awesome. If you’re short on time, what you can do is just bring the pitas with you and put the filling in a separate container. Then you can just assemble it at school. Or, if you have a little bit more time, what I’m doing is making them into little mini enchiladas. I’m putting [inaudible 00:01:47] dish with some sauce, putting sauce over top. Since the pitas are kind of stiff, they break a little easy. You want to fully coat them with the sauce, and then when they’re in the oven, they will just form nicely around the filling. That’s what I’m going to do. You want them to cook until the liquid evaporates and it just sinks into the actual pitas. Want it to be a little bit crunchy, so you got to get it just right. They’re super awesome, super delicious. First thing that I’m doing is taking some chickpeas and roasting them. You really don’t have to do this. You can just use normal, drained and cooked chickpeas, but I want them to be a little crunchier so I’m going to throw them in the oven at 400 degrees for about 15 minutes. While I was waiting I made an awesome chia pudding. I made a lot because I just love chia pudding. I did half probably a cup or more of almond cup and then four tablespoons of chia seeds, a teaspoon of cocoa powder, and a tablespoon of maple syrup. Put that all in a jar, shake it up, and then by the time you go to school it’s going to be like a pudding and it’s going to be delicious. Super cool and fun to make. I basically just put all my favorite ingredients together. That’s my lunch today. I know I look so weird with two jars or whatever. I will see you guys in my next recipe, which is going to be now. My favorite from childhood. I used to always make English muffin pizzas, but they weren’t as healthy, so I’m going to majority this amazing one with a cilantro pesto. Look at all these awesome ingredients. We’re making the cilantro pesto first. Take a clove of garlic and put it into a blender with about a cup of cilantro. Then you want to pulse that up. Add about a tablespoon of olive oil and half a tablespoon of lemon juice. Then you can add a little bit of salt to spice it up. That’s it for the cilantro. Very easy. Now take your whole wheat English muffins and put them in half’s. Then you want to take some marinara sauce or a pizza sauce obviously, and then put your cilantro on, as much as you like. You can use whatever toppings you wish; I like mushrooms and peppers. I’m finishing the pizzas off with some Daiya mozzarella cheese. It literally takes like 15 minutes to do everything. They smell delicious right now; they’re so good. I usually eat four of these for lunch. This is kind of like a staple sandwich for me because it’s very fast to make and super filling. I’m just blending up some chickpeas so that they’re mushy, and adding a little bit of coconut oil. Or you can use the vegan butter, which is Earth balance, and about a tablespoon of that. I’m adding some chopped green onions and then some shredded carrot as well, and mixing that up for the chickpea salad. Now for the base of your sandwich, you want to get some toasted bread, preferably something healthy. I’m adding some sun-dried tomato pesto on one side and on the other side the chickpea salad with some kale, tomatoes, and cucumbers. Woo, I just wanted to leave this video saying that I basically showed you all the main courses for your lunches, like a sandwich, basically the main thing. I also suggest to bring a banana or an orange, or two kind of pieces of fruit so that you have energy throughout the day. I hope you guys like this video. Thanks for watching.
